Sloppy Joe Style Open Face Sandwich

This open face sandwich is delicious!  This is how I made it.







1/2 cup TVP

2 tbsp Martha Stewart’s Vegan Worcestershire Sauce

1 cup homemade vegetable stock

2 tbsp olive oil

My homemade vegetable stock


Mix TVP, worcestershire, and vegetable stock, and oil together, stir well and let mixture set for about 30 minutes stirring occasionally.

Chop turnip strips into pieces about 1/4″ This is dried turnip strips that have been simmered in homemade vegetable stock.

Add the chopped turnip strips into the TVP mixture. Set aside.






1/2 large Onion, chopped to about 1/2″ x 1/2″ pieces
4 Scallions, slice white and green parts to about 1/4″ thick slices
1 Jalapeno Pepper, remove seeds and pith, cut pieces about 1/4″ x 1/2″
1/4 Large Red Bell Pepper, cut into pieces about 1/2″ x 1/2″

In med hot skillet, with a little coconut oil, brown the drained TVP mixture and veggies, after browning for about 8 minutes over medium high heat then add any liquid that was leftover from draining the TVP. Cover, and let simmer on low for about 5 minutes and then turn off and let set about 15 minutes for the residual heat to complete the carmelization. I use a heavy cast iron skillet that has great residual heat.







Serve on Whole Wheat bread, open face sloppy joe style.

Mexican style corn is good side dish to accompany this sandwich.
