Steel Cut Oats

Did you know that soaking grain overnight in acidulated water makes nutrients more available so increases nutritional value? It also makes the grain more digestible!

Ingredients to soak

3 cups water

1 tbsp cider vinegar

1 cup steel cut oats

Soak over night at room temperature

Next morning pour through strainer, rinse well.

To cook:

1 cup water

soaked oats

1/4 tsp coarse Morton’s Kosher salt

Cook in a pot with cover over medium heat for 5 minutes stirring occasionally.

Remove from heat, and serve as breakfast cereal or to use in recipes such as Okara Oat Flatbread.
